Garlic Cloves (1-2, chopped)
Onions (1 small, chopped)
2 tbsp Dr. Oetker FunFoods Veg Mayonnaise Original
3 tbsp Olive Oil
0.5 tsp Coriander Powder
0.5 tsp Chilli Powder
15 g Red Bell Pepper
15 g Yellow Bell Pepper
200 g Sweet Potato (boiled & grated)
1 tsp Garam Masala Powder
1 tbsp Jalapenos
2 tsp Dr. Oetker FunFoods Veg Mayonnaise Green Mint
60 g Sweet Corn Kernels
Salt
2 no. Tortillas
2 tsp Dr. Oetker FunFoods Veg Mayonnaise Original

For the Kathi Roll mixture- Heat 30 ml oil in a pan, add garlic, onion, bell-peppers, sweet potato, sweet corn, coriander powder, chilli powder, garam masala powder, jalapenos and salt.

Saute vegetables for 3-4 minutes and add veg mayonanise original. Mix well.

Heat remaining oil in a pan and warm tortillas from both sides. Spread mint mayo on both the tortillas, place above filling and roll up the tortilla. Let it cook until it gets crispy and then remove from pan

Cut and serve.
