Ingredients:

about 200 - 250 g Potatoes (3 quantity)
Salt (As per taste)
1 tsp Black Pepper Powder
2 tbsp Olive Oil
1 Jalapeño (1)
30 g Red Bell Peppers
30 g Green Bell Peppers
30 g Yellow Bell Peppers
30 g Yellow Bell Peppers
100 g Corns
½ tsp Dried Oregano
1 tbsp Celery (chopped)
3 tbsp Dr. Oetker FunFoods Mayonnaise Veg
30 g Spring Onions (finely chopped)
3 - 5 Piece Cherry Tomatoes (3-4 for plating)
about 1 tsp Dr. Oetker FunFoods Chillico (for dressing)
1 Papad (roasted)

Take the potatoes in a bowl, add some salt & ½ tsp of crushed black pepper. Add 1 tbsp of olive oil and toss it so that they are glazed evenly. Bake them for about an hour in a pre-heated oven at 200 degree C.

Keep the pan on the flame, add the chopped jalapenos, mixed bell peppers, sweetcorn & toss them over for about a few minutes. Season with oregano, celery, salt, crushed black pepper & turn the flame off.

Take out the potatoes from oven and let it cool

Put the mixture from the pan into the same bowl which was used for marinating the potatoes. Slice the potatoes in halves vertically & scoop out the baked potato into the mixture, leaving just a jacket of the potatoes. Mix thoroughly, then add 3 tbsp of veg mayonnaise and mix it further, add chopped spring onions. Our mixture is ready.

Now stuff all the potato jackets with this mixture and bake for 10 minutes in a pre-heated oven at 180 C

Serve as suggested with garnishing of roasted papad
