for the recipe Grilled Vegetable Sub


1 - 2 Mushrooms , sliced
½ small Eggplant , sliced
¼ each Red, Yellow and Green Capsicum , de-seeded and sliced in quarters
1 small Onion , sliced into rounds
2 tbsp Olive Oil
3 - 4 Garlic Cloves , chopped
Black Pepper Powder
60 g FunFoods Zer0Fat Dressing South West
2 Slices Processed Cheese
1 no. Focaccia Bread , slice it half lengthwise without cutting through and toasted




In a bowl add, mushrooms, eggplant, capsicum and onion. Add 1 tbsp olive oil, garlic, salt and pepper to above vegetables. Toss gently.


Heat remaining oil in a griddle (medium flame). Place the vegetables on the grill and cook for 3-4 minutes. Gently flip veggies with a spatula when veggies start to soften and grill marks develop. Cook for another 3-4 minutes or until vegetables are cooked.


Preheat oven to 180°C.


On lower, half of the bread place above grilled veggies. Drizzle 2 tbsp dressing, top it up with cheese and bake in oven for 3-4 minutes or until cheese melts.


Drizzle remaining dressing on top and serve.
