Ingredient:

2 tsp Olive Oil
Salt
Black Pepper Powder
0.5 Pieces Tortillas (cut into thin strips)
3 - 4 no. Lettuce Leaves (shredded)
50 g Red Kidney Beans
50 g Sweet Corn Kernels
medium Onion (diced)
1 medium Tomato (seedless & diced)
1 - 2 Green Chillies (chopped)
50 g Peanuts (roasted & crushed)
75 g FunFoods Zer0Fat Dressing Ranch

Heat oven to 180°c

In a bowl, add 1 tsp olive oil, salt, pepper and tortilla strips. Mix gently

Place tortilla strips on a baking sheet and bake for around 7-8 minutes or until strips have become crisp and light brown

Heat remaining oil in a non-stick pan. Add paneer, salt, pepper and sauté for 2-3 minutes or until paneer has become light brown and crisp

For Assembling- In a bowl add lettuce, kidney beans, sweet corn kernels, onion, tomato, green chili, peanuts, above sautéed paneer, ranch dressing, salt and pepper. Mix well

Place salad in a serving plate/bowl, top it up with crispy tortilla strips and serve
