Roast each piece of papad. Immediately fold hot papad from the edges to make a “U” shape. Leave aside to cool and become crisp.
In a bowl add kidney beans, cucumber, bell peppers, coriander leaves, mint mayonnaise, salt and pepper. Mix well until mixture is smooth.
Place above mixture in U-shape papad and pour over the salsa. Serve.
