Loaded Vegan Sandwich
How to Prepare:
Hummus- In a blender jar add chickpeas, beetroot, garlic, 2 tbsp vegan mayo and salt. Blend for 1 minute or until smooth paste is formed.
Assembling- Spread remaining mayonnaise on both the bread slices. On a bread slice place few lettuce leaves, spread hummus, top it up with avocado, radish, carrot and remaining lettuce leaves. Cover it with the other bread slice and serve.
