|15 ml||Olive Oil (1tbsp.)|
|250 g||Aubergines (1 medium, sliced)|
|35 g||Onions (1/2 small, chopped)|
|30 g||Mushrooms (3 medium, diced)|
|30 g||Pine nuts (chopped)|
|30 g||Dr. Oetker FunFoods Veg Mayonnaise Original (2tbsp.)|
|5 g||Dr. Oetker FunFoods Chillico (1tsp.)|
|5 g||Salt (1tsp.)|
|5 g||Black Pepper Powder (1tsp.)|
Heat 1/2 tbsp. of oil in a non-stick pan. Shallow fry aubergine slices until light brown and crisp from both sides. Put on a tissue paper to drop off excess oil.
Again heat 1/2 tbsp. of oil in a same non-stick pan. Add onion and mushroom sauté for 5 minutes.
In a bowl add sautéd vegetables, veg mayonnaise, pine nuts, salt, black pepper powder, chillico and mix well.
Put 1tsp. of this mixture in the centre of each shallow fried aubergine slice and roll. Serve hot.
